BAKED COD WITH POTATOES AND TROPEA RED ONIONS

RECIPE :

  • 4 pieces of cod fillet already desalted

  • 3 Tropea red onions

  • 6 yellow potatoes

  • extra virgin olive oil, parsley and rosemary salt and hot pepper to taste.

PREPARATION :

Chop the onion. Rinse well and dry the dried salted cod with a dish towel. * Pour the oil in a baking pan, spreading it well over the bottom and arrange the onions first, then the cod and the diced potatoes; salt with a light hand and add rosemary and hot pepper, if desired. Preheat the oven to 250 ° C, bake for about an hour, turning everything gently until it is golden brown. Once cooked, sprinkle with chopped parsley and serve hot. * If the cod was purchased still salty, do not forget to soak it two days before, often changing the water or, if possible, letting a stream of water flow into the container.
